Soup for the Soul: Potato Soup

Also called Widow Potatoes in Spain, this surprisingly easy potato soup warms up the soul in winter!

"Patatas Viudas" is one of my favourite childhood recipes.
Quick and simple, you can add any green vegetable you like provided it doesn't have an overpowering flavour
Soup: Widow Potatoes that warm the heart
This is a recipe that my grandmother used to make in her kitchen.
You just need potatoes, red pepper, onions, olive oil, salt and water.
My mum added leek, as it is rich in calcium
It can be easily done in a pressure cooker and I presume in a slow cooker, although I have never tried those ( maybe a resolution for the nee year??)
Ingredients ( 2 medium sized potatoes per person)
4-6 medium sized potatoes peeled and cut in "thick wheels"
Olive oil ( extra virgin)
Salt
Red pepper
Optional: Spinach leaves and sweet paprika ( Pimenton de la Vera)
Instructions
Warm up the oil in a pan and fry the onion until it is soft.
Add the red peper ( make sure it doesnt burn)
Add the potatoes and stir fry for a few minutes
Add salt.
Add water and cover.
They should be ready in approx 15 minutes, but check with a fork to make sure they are soft.
