Beetroot Mince

This deceptively easy recipe will satisfy even the hard core meat eaters that's it, if you don't mind the lovely earthy beetroot flavour...


Do you like beetroots? This root vegetable is a powerhouse of nutrition ( according to Kidstir root vegetables grow underground,and they absorb a great amount of nutrients from the soil. They are packed with a high concentration of antioxidants, Vitamins C, B, A, and iron, helping to cleanse your system

So let's get cooking!


Beetroot Mince


4 small beetroots or 2 medium sized

Sea Salt

Pinch of dried or fresh rosemary

Extra Virgin Olive Oil


Instructions

Mince the beetroots in a food processor. Add coarse sea salt or salt of your choice.

Add olive oil ( I love La Española with a hint of truffle, but any extra virgin olive oil will work)



Set on an oven tray and bake for 20-25 minutes at 160 degrees.

Sprinkle rosemary.

Enjoy!
