Soccas are literally a dinner time life saver

Socca pancakes are also called farinata and they are widely used in France and Italy
Nutritional value
Chickpea flour is highly nutritious, rich in protein and carbohydrates.
It can be roasted to increase its nutty flavour.
I normally only use it for savoury pancakes, but they can be used for sweet creations as well.
Ingredients
1 cup ( 250 grams) of chickpea flour
1 cup of water
A pinch of sea salt
Two tablespoons of olive oil (a bit more needed to grease the pan to cook the socca)
Spices: feel free to experiment, I usually add paprika, cumin, garam masala, sesame seeds, fennel seeds and black pepper.
Mix the flour, water and sea salt. Mix well and the olive oil.
Add olive oil to the pan and pour part of the mixture.
When the liquid has been absorbed, flip around
Uses and possibilities
Use it as a base for a pizza with tomato sauce, basil leaves, pesto and fresh mozzarella.
It can be used as a wrap with hummous or other fillings
I personally prefer it warm but it can be used cold as well.
